No Smoking
It is inconsiderate and offensive to other tasters to smoke in the tasting room
Wine Temperature
White wines and rosés – cool
Red wine – Room temperature (±18°C)
Timing
Our senses are keenest earliest in the day, but this is not always practical, so early in the evening will suffice.
Order of tasting
Dry before sweet; young before old; modest before fine; dry, off-dry and semi-sweet before red; sweet wines after red.
"Come clean"
No perfume or aftershave
Taste "blind"
The label must be covered (not your eyes).
Physical hazards
A streaming cold, recent use of toothpaste, highly spiced foods.
Cleanse your mouth with a dry cracker.
Don't swallow, spit
You don't need to swallow wine to taste it. Swirl the wine around in your mouth to ensure that all the taste buds are covered.
The drinking vessel
Glass is the ideal material.
It should be tulip-shaped crystal clear and stemmed, with at least 140ml capacity.
Make notes
Notes provide you with a reference for comparing.
